Cracker Crust Pizza
3 cups of flour unbleached flour (or different flours amounting to 3 cups)
1 tsp fine grain sea salt
1 cup warm water
1/3 extra virgin olive oil
Whisk flour and salt together. Then add warm water and olive oil, mixing with wooden spoon until unmanageable--and move to hands. Continue to mix dough for a couple of minutes, once evenly incorporated you'll have one big ball. Divide into fourths and shape each section into its own small ball. Drizzle lightly with olive oil and set aside while you prepare your pizza ingredients.
